WUR Seminar op Food Technology 2021: Food Innovation

Het kan niet anders, dan dat Wageningen University & Research (WUR) een belangrijk onderdeel is van Food Technology op 1 en 2 december. De universiteit komt met twee demonstraties op de beursvloer en zelfs zes sprekers op de podia.

Demo: Spreading the perfect chocolate layer using 3D food printing and computer vision

Over-extrusion and under-extrusion of the filament are common problems during extrusion-based 3D printing of foods due to the complex textures of food inks. We developed a computer vision (CV)-based control method to assist 3D food printing, to more accurately extrude the food filament with desired geometry. The CV-based method serves as a calibration step to inform 3D printers about the various textures of printable foods. The printing parameters can then be adjusted based on this information. With this method, we can achieve improved printing accuracy during each starting-stopping steps and prevent excessive waste during 3D printing of food.

Demo & lezing: Fully documented fisheries

Fully Documented Fisheries project, founded by the European Maritime and Fisheries Fund, aims, within the context of the forthcoming the European Landing Obligation, to fully document the catches from fisheries using Electronic Monitoring as a catch registration tool to automatically record the number and weight by species of the discarded catch. The detection of unwanted fish on board commercial bottom trawlers produces a logbook recording the total catch, weight, and length for each species. The presence of debris, catch occlusions on the sorting belt, fish overlapping, and the illuminance variation are the most fundamental challenges the system has to face.

Bij deze demo hoort ook een lezing van ir. Angelo Mencarelli, op 1 december om 11:45 uur. Mencarelli (zie foto hieronder) is onderzoeker in Computer Vision & Robotics en member van het Agro-Food Robotics onderzoeksteam bij Wageningen University & Research. Zijn onderzoek concentreert zich op robotica, kunstmatige intelligentie, en computer vision toegepast op voedsel kwaliteit control, gewassen management en oogsten in  kassen en open veld,  en visserij management en control onshore en offshore.

Lezing op 2 december, spreker dr. Görkem Simsek-Senel: Through interoperable data towards a traceable and transparent food system

The journey of the food from farm to fork is becoming more transparent for a more efficient and fair supply chain, for more sustainable products and for a more personalized approach to consumers. One possible pathway is the digital exchange of the data of  processes and products. However, digital data-sharing alone is not sufficient as data requires proper and standardized descriptions to be machine-readable. This talk will be about how interoperable data offers big potential in cutting-edge software applications in Internet of Things using AI in agri-food domain.

Lezing op 1 december, spreker dr. Puneet Mishra: Spectral sensing, multi-sensor fusion and embedded spectral sensing for quality measurement in food

Optical spectral sensing provides a plentiful of options for non-invasive and non-contact analysis of food products and processes. This presentation will provide insight to recent developments in spectral sensing and application in the domain of food products and process analysis. Some real-life examples of developing spectral sensing at Wageningen Food and Biobased Research will be provided. Advanced concepts such as multi-modal spectral sensing and embedded spectral sensing will also be discussed.

Lezing op 1 december, spreker drs. ing. Joost Snels: Minimaliseren van kwaliteitsverliezen tijdens transport door IoT en ketentransparantie

Gepresenteerd zal worden hoe op een betaalbare wijze met IoT- en sensortechnologie de kwaliteit van versproducten tijdens transport kan worden gemonitord en hoe daarop te anticiperen om die kwaliteit te behouden en voedselverliezen te minimaliseren. Niet alleen zal het concept Dynamic Quality Controlled Logistics toegelicht worden, maar ook de business case toegepast op invoer van groente en fruit vanuit West-Afrika, de verschillende projectdemonstraties en het business model.

Lezing op 1 december, spreker ir. Eelke Westra: Pack with impact

Packaging keeps food products safe, damage-free, and last longer. But the environmental impact of conventional packaging is high. Wageningen University & Research develops sustainable and safe alternatives for each specific situation. In addition to the material, we also look at the design of the packaging, the recycling and composting options, and technology to extend the shelf life of food.

Together with stakeholders, we shape sustainability through research into sustainable packaging, the design of smart logistics chains, and the development of sustainable packaging alternatives. With our multidisciplinary approach, we work on feasible, sustainable packaging solutions, while preserving food quality.
